Donut Peach Tomato Salad

I think this is the dish that feels most like summer to me. It find it exquisitely unexpected..
Doubtful I would have ever experimented putting peaches and tomatoes together, so every time I make this I feel this giddy delight with an "I cannot believe this works!" It still surprises me every time, lol.
Nevertheless, it works and is addicting. Juicy, sweet, with that subtle, fruity, savory flavor from the olive oil, slightly creamy, with little peaks of mint and basil. Just when you thought it was a side dish, or a starter, you are no sooner scarfing it down into a entrée.

Donut Peach Tomato Salad Recipe
4-5 Donut Peaches, cubed
4-5 Campari Tomatoes (for their size, but any tomato will do), quartered
Handful of cubed sourdough bread
1 Burrata Ball
Liberal amounts of Fresh Mint, torn
Liberal amounts of Fresh Basil, torn
Dressing
1/3 cup Fruity Olive Oil
2 teaspoons White Balsamic Vinegar
Juice of half a medium Lemon
1 clove Garlic, minced on a microplane
Maldon Sea Salt, to taste
Method
Start by making the croutons
drizzle olive oil over cubed sourdough bread pieces and toast on medium heat in a nonstick skillet. no need to soak each piece of bread in oil; a drizzle will do.
once toasty brown, set aside to cool.
Next, whisk the dressing together in a small bowl. Set aside.
Compose the salad
Toss tomatoes and peaches together in a medium serving dish.
Add croutons
Sprinkle torn herbs to your heart's content.
Using a large spoon, drizzle 3/4 of the dressing over the top.
Tear the burrata cheese in half, placing one half in the middle of the salad.
Using a fork or spoon, scoop out the soft middle of the other half and scatter around the dish. Tear the remaining cheese shell and place/mix with soft cheese.
Finish with remaining drizzle of dressing and garnish with a mint sprig
